Cacao Stripes

No need to eat store-bought cookies with all sorts of additives when you have this option!

Ingredients

  • Cookie
  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 1/2 cup shredded coconut
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1 egg
  • 2 tablespoons raw honey (or other desired sweetener)
  • 3 tablespoons coconut oil
  • 2 tablespoons softened butter
  • Topping
  • 1/4 cup cacao paste (or combine 1/4 cup melted coconut oil with 1/4 cup powdered raw cacao)
  • 1/4 cup coconut manna
  • xylitol or stevia to taste (or raw honey)

Instructions

  1. Combine almond flour, coconut flour, shredded coconut, baking soda, and salt in food processor.
  2. Pulse.
  3. Add egg and remaining ingredients.
  4. Process.
  5. Place spoonful of batter onto greased cookie sheet or parchment paper.
  6. Flatten each.
  7. With utensil or fingers, create a hole in each cookie.
  8. Bake at 350 degrees for approximately 10 minutes.
  9. Remove from oven and cool to room temperature.
  10. Prepare topping.
  11. Melt cacao paste, or melt coconut oil and cacao powder combination.
  12. Add coconut cream and sweetener.
  13. Stir.
  14. Drizzle chocolate over cooled cookies.
  15. Place in freezer for approximately 10 minutes.
  16. Remove.
  17. Place in fridge. (Cool overnight to keep the chocolate firm for a bit longer when serving.)

    Any thoughts on how to sub out the honey with stevia? I use the Sweet Leaf powder.

      It won’t take much stevia powder that’s for sure. Since you’re experienced with the Sweet Leaf I bet you’ll know. I would start with less and add more to the cacao mixture if it’s not enough.

    Just made these tonight! Thanks for the wonderful recipe! We love them. They aren’t a very sweet cookie but are very tasty and are very good with a chocolate drizzle on top. And I also added 1/2 tsp vanilla to the cookie dough. It tasted great to us.

    I did a simple chocolate drizzle with some things I have on hand; 1/4 cup honey, 2 TBS butter (or coconut oil), 3 TBS cocoa powder, 1/2 tsp vanilla. Melt in pot or double boiler and you have a very nice chocolate sauce that we like on everything!

    Made these for a party I was going to and got rave reviews… They are crunchy and just lightly sweet. They really satisfy with a buttery, nutty, caramelized flavor. Note: I used honey to sweeten but added a bit more than suggested. I used 5 tablespoons. Also added vanilla… yum! Thanks for another great recipe!
