Coconut Coffee Ice Cream

This is one of the simplest ways to make homemade ice cream. Coconut cream combines with any number of desired flavors to make a crowd-pleasing dessert. This version blends the flavors of vanilla and coffee for a nice latte flavor.

This is a fun way to use coconut cream!

Ingredients

  • 2-3 cups coconut cream*
  • 1/2 cup fresh coffee or 1 teaspoon coffee extract
  • 1 tsp vanilla
  • sweetener to taste (I like non-GMO xylitol or liquid stevia)

Instructions

  1. Blend ingredients thoroughly. (Food processor, Vitamix, hand blender, or whisk.)
  2. Pour into ice cream maker and follow manufacturer's directions.

*Coconut cream can be obtained by refrigerating coconut milk. The fat will rise. Simply skim off and use in this recipe. (I like Thai Kitchen Organic Coconut Milk.)

      Yes, but I think stronger would be better. Some in my family didn’t taste the coffee like I hoped.

    This looks delicious! What brand of coconut cream did you use? Also, is there a brand of coconut milk you recommend? I’ve had a difficult tinge finding one with ingredients I agree with.

    Might try making this with cacao nibs too or cacao powder. Yum! 🙂

      The cacao nibs are a great idea! I bought this cream from Wilderness Family Naturals.

      I also like the coconut milk powder from Wilderness Family Naturals but haven’t tried it for this to know how much fat rises.

        Making your own is way cheaper and vwry easy. Make it easily in a vitamix. Takes 3 minutes

    This didn’t have much a coffee flavor and was icy, not creamy like Ice cream. I make a lot of gelato, sorbet and ice creams and this recipe was a disappointment.
