Gluten free Strawberry Pie

Our family loves this simple grain-free dessert. Include dates in the crust or leave them out. Either way, this gluten-free strawberry pie will disappear!

This is our go-to recipe for holidays and birthdays. Sugar-free and grain-free - it's delicious and satisfying! The dallop of cream can easily be omitted if you prefer to keep this dairy-free.

Ingredients

  • Crust
  • 4 tablespoons coconut oil
  • 2 cups almonds (I soak them overnight and re-dry them to reduce phytic acid.)
  • 2 cups shredded coconut or coconut flakes
  • 1 cup pitted dates (I like to soak them overnight and re-dry them to reduce natural sugars.) You can also omit them and use more coconut oil to keep the crust together.
  • Filling
  • 4 tablespoons coconut oil
  • 4 cups fresh or frozen strawberries (use any combination of berries for variety.)
  • 4 cups shredded coconut or coconut flakes
  • optional: sweetener of choice

Instructions

  1. Process crust ingredients in food processor. Press into 12 X 14 glass pan or 2 pie plates.
  2. Blend filling ingredients in high powered blender. Spoon into crust. Refrigerate.

    I’ve been sick for several years. We’ve just had a dust test (through RealTime Labs) that proves the presence of micotoxins (Trichothecene). So we have to move to a new house. Please advise, as this is all pretty overwhelming. How did you find a safe home? I know that mold can be tested for in a new location, but what about micotoxins – did you test for them too before you moved? What possessions (if any) can we safely take with us? Any advice will be greatly appreciated. Leah
