Almond Flour Muffins - By Kids For Kids

I like the simplicity of this recipe. I enjoy this for breakfast or dessert.

Ingredients

  • 1 cup almond flour*
  • 2-3 eggs (depends on size)
  • A little less than a tablespoon of honey (or stevia, xylitol to taste)
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon apple cider vinegar
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine almond flour and baking soda in food processor.
  3. Blend.
  4. Add vinegar, sweetener, eggs and vanilla extract.
  5. Blend.
  6. Pour into parchment lined muffin pan.
  7. Put in oven for 15-20 minutes.
  8. Cool and serve.
  9. Makes 8 large or 12 small muffins.

*Improve the bioavailability of nutrients by soaking and drying the almonds before making your flour. A food processor works well when grinding the almonds into flour. For more on soaking and sprouting see New to Soaking or Sprouting?

    Have you ever added fruit to them? I have a few apples in the fridge that are past fresh-eating stage… but would be great for grating into a muffin recipe.

      You can make applesauce and blend in when you mix up the ingredients are fold in some chunks. Sounds like a great idea, Elaine!
