13 year-old Brandon created this refreshing key lime pie using ripened avocados and fresh limes!

Avocado Key Lime Pie

This low carb dessert offers plenty of healthy fat with a refreshing lime taste!

Ingredients

  • Crust
  • 1.5 cups almond meal
  • 1 tsp vanilla extract
  • 2 dates
  • 1-2 tbls almond butter
  • Filling
  • 3-4 ripened avocados
  • juice from 3-4 limes
  • sweetener to taste
  • optional: lime zest

Instructions

  1. Process crust ingredients in food processor.
  2. Press into pie plate.
  3. Set aside and clean food processor.
  4. Process filling ingredients until light and creamy.
  5. Spoon into crust.
  6. Place in freezer for a minimum of 15 minutes.
  7. Remove, cut and enjoy!
