Egg-free, Grain-free Cookies

These egg-free, grain-free cookies are my go-to for any holiday treat. With a silicone mold or decorative frosting, you can celebrate Christmas, Valentine’s Day, or even birthdays!

                                                    Egg-free, Grain-free Cookies

These flavorful gluten-free cookies melt in your mouth and are ideal for anyone with egg sensitivities or food intolerances. Blanched almond flour is preferred, although I’ve had success with unblanched almond flour. I add a bit of flax meal and garbanzo flour to avoid crumbling, but I find putting these cookies in the refrigerator after cooling helps them stay together for easy decorating. Of course, they are just as good straight out of the oven with no decorating!

Gluten-free Cookies

Ingredients

  • 1 1/2 cups almond meal (blanched almond flour is ideal)
  • 2 teaspoons vanilla extract
  • 3 tablespoons sweetener (or to taste)
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon high-quality gelatin
  • 2 tablespoons coconut flour
  • 1/4 cup garbanzo flour
  • 1/4 cup flax meal
  • 6 tablespoons melted butter or ghee (vanilla bean ghee is even better!)

Instructions

  1. Preheat oven to 350 degrees.
  2. Blend dry ingredients. (Including sweetener if using stevia powder, xylitol, monk fruit, etc.)
  3. Blend wet ingredients. (Melted butter or ghee, vanilla extract, and liquid sweetener such as honey or liquid stevia.)
  4. Stir wet ingredients into dry ingredients until dough forms.
  5. With clean hands, form dough into approximately 12 balls and place on parchment paper-lined baking sheet. (Or press balls into individual silicone molds, if using.)
  6. Bake for 10-13 minutes until golden brown on the edges.
  7. Cool.
  8. If desired, place molds (or cookies) in refrigerator. This will make them firmer and less crumbly. But they're delicious either way!
  9. Add frosting if desired!
