Sugar-free, Grain-free, Gluten-free Key Lime Pie

This refreshing dessert combines a simple pie crust made with almonds, dried fruit and coconut flakes with homemade ice cream. I love lime but you can easily adapt using lemons.  Of course any homemade ice cream recipe will work for the filling. Homemade coconut ice cream makes a great dairy-free version! Transform any homemade ice cream into a cream pie with this simple recipe!

Ingredients

  • Crust
  • 4 tablespoons coconut oil
  • 2 cups almonds (I soak them overnight and re-dry them to reduce phytic acid.)
  • 2 cups shredded coconut or coconut flakes
  • 1 cup pitted dates (I like to soak them overnight and re-dry them to reduce natural sugars.)
  • Filling
  • 1 cup cream (raw is optimal, pasteurized organic is an option - avoid ultra pasteurized)
  • 1 cup milk or yogurt (raw milk is optimal, organic yogurt is an option)
  • 2 egg yolks (pastured, organic eggs are optimal)
  • 1/3 cup freshly squeezed lime juice
  • 1 tablespoon lime zest
  • 1 tablespoon gelatin (grass fed is optimal. I like [url undefined]Great Lakes[/url])
  • sweetener of choice (I use 1/4 cup non-GMO xylitol - other options include a lesser amount of stevia or 1/4 cup raw honey)

Instructions

  1. Process crust ingredients in food processor.
  2. Press into 12 X 14 glass pan or 2 pie plates.
  3. Prepare Ice Cream.
  4. Lightly beat egg yolks. ( I use stick blender - whisk works too.)
  5. Add milk,cream, lime juice and lime zest.
  6. Blend thoroughly.
  7. Add gelatin and whisk again. (You may heat the mixture on low setting to be sure this blends fully. I find the stick blender does an adequate job.)
  8. Pour into ice cream maker and process according to directions.
  9. Spoon onto crust and freeze again until ready to serve.
  10. If desired, add a spoonful of freshly whipped cream.

    Wonderful recipe Andrea! Thank you so much for sharing! My hubby enjoyed it immensely! I did, however, make some minor adjustments: I have a little bit of a sweet tooth so I put a little more honey than the recipe calls for. Also, after the custard was done churning, I thought I might as well throw both the crust and custard in the oven and let it bake for approximately 12 mins. Subsequently, I let it sit in the fridge for about 5 hours and it set! In my opinion, these minor tweaks made the key-lime pie more of a pie. I just couldn’t wait to spoon the custard each time and freeze the rest. Seemed like too much of a hassle! Otherwise, this key lime pie had a superlative flavor! Thanks again
