These muffins are grain-free and sugar-free and use one of my favorite ingredients -Tiger Nut Flour!

Tiger Nut Pumpkin Muffins for ITT

Have you heard of Tiger Nuts? They aren’t nuts at all, but rather a low-carb legume full of fiber and vitamins. Also called Earth Almonds, Tiger Nuts are perfect with those who are allergic to nuts or don’t do well with nuts or seeds in general. (That’s me!) I enjoy the peeled Tiger Nuts for snacking. I also add them to our homemade gluten-free granola. (Check out the recipe here.) The flour works great in sourdough bread, pancakes and these muffins.

Tiger Nut Pumpkin Muffins

These Tiger Nut muffins are full of flavor and nutrition! Coconut flour or almond flour can be substituted for the flour.

Ingredients

  • 5 eggs
  • 1 cup of pumpkin puree (fresh pureed squash may be substituted.)
  • 1/4 cup coconut oil or butter (softened)
  • 1/2 cup tiger nut flour (see source information below.)
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1-2 Tablespoons of pumpkin pie spice or cinnamon
  • Sweetener to taste (I use xylitol and/or stevia -honey will also work.)

Instructions

  1. Preheat oven to 400 degrees.
  2. Put all ingredients in medium sized bowl.
  3. Using strong whisk or immersion blender mix until smooth and well incorporated.
  4. Put into greased muffin tin or use parchment paper muffin liners. (Makes 12 small or 6 large muffins.)
  5. Bake for 15-18 minutes.

Tiger Nut flour can also be found on Amazon here. While Tiger Nuts are a bit pricey, you can stretch them to last quite awhile – especially the flour. I’ve had the same bag for several months.       Everybody is different, but I know that for me I don’t need sweetener. Just extra spices for flavor.

      It’s fairly thick for me, so not sure how it will do if it’s a little thin. It might be just fine.

    I thought the texture of these was great. I’m doing the Plant Paradox diet so I substituted sweet potato purée. Next time I make them I would add salt & lemon to brighten the flavor and do a bit extra spice. Overall a great base recipe for alternate flour muffins. Thank you!
