Grain-free, Nut-free PB and J Sandwich

Since the beginning of our grain-free journey in 2010, our family has missed the old-fashioned PB and J sandwich.  Recently we enjoyed our own version with homemade sourdough bread, sunflower nut butter, and homemade cranberry jelly!

This recipe takes some advance preparation, but once everything is ready it’s a snap to assemble!

Sourdough Bread

I use a combination of quinoa flour, flax meal and tiger nut flour for my homemade sourdough bread. Tiger nuts are not nuts at all. They are nourishing legumes and the flour is delicious in this recipe. (Read more about tiger nuts and tiger nut flour here.)

I use kombucha as a starter to ferment the quinoa flour overnight. (See DIY Gluten-free Sourdough Starter.) I add the tiger nut flour and flax meal and allow it to sit in a loaf pan lined with parchment paper for several hours. For complete instructions see Grain-free, Gluten-free Sourdough Bread.

Allow the bread to cool and rest for a period of time to avoid bread that crumbles easily.

Jelly

You can purchase a natural jelly with fruit only, or make your own version by pulsing frozen fruit in a blender to create a jelly-like fruit spread. I use cranberries and berries to keep the natural sugar content low. I blend in a bit of Irish moss for thickening. (Chia seeds make a great thickener as well!)

The synthetic version of Irish moss is carrageenan, which you’ll often find in nut milks and other food products. Learn more about Irish moss in its natural form here.

Nut Butter

Our family does fine with nuts, so I often use homemade almond butter. I avoid peanut butter due to the common presence of aflatoxins, a potent carcinogen produced by the Aspergillus flavus and Aspergillus parasiticus molds. Walnuts, pistachios and Brazil nuts have also been implicated so I stick with macadamia nut butter or almond butter.

When making almond butter from scratch I’ll often combine macadamia nuts and almonds as the high oil content of the macadamia nuts lessens the processing time. I also soak and dry my nuts before making nut butters. Learn more about soaking and sprouting here.)

The nut-free version utilizes sunflower butter. I like Once Again Organic Sunflower Butter.

There are all sorts of variations that are possible with this combination depending on dietary needs. Why not try an all natural, homemade version of PB & J!

    Wonderful post! That PB&J sandwich looks delish. I’m also interested in making jelly and yours looks scrumptious! Any way you could provide exact measurements of the berries and cranberries as well as the Irish Moss? I love all your posts

      Approximately 2 cups cranberries and berries (mostly cranberries) and stir in a tablespoon of the irish moss gel. Chia seeds work just as well. Thanks for the encouragement!
