Three Ingredient Maple Coconut Butter Bites

Looking for gluten-free, sugar-free healthy snack and dessert alternatives? Try these delicious Maple Coconut Butter Bites!

Toasted coconut combines with butter and maple flavoring to make these delicious butter bites! Paleo and GAPS friendly!

You can tweak this recipe however you like. Try vanilla, citrus, or chocolate flavored varieties! Add extra sweetener if desired. (See 5 Sweetener Alternatives.)

Maple Coconut Butter Bites

This low-carb snack is not only delicious, it also offers lots of healthy fats!

Ingredients

  • 3 cups shredded coconut
  • 2 tablespoons ghee or butter
  • 1/2 teaspoon maple flavoring

Instructions

    Gather ingredients.
  1. Preheat oven to 400 degrees.
  2. Toast the shredded coconut on parchment-lined baking sheet till brown. (Approximately 8 minutes.)
  3. Place toasted coconut in a food processor.
  4. Blend till creamy. (Approximately 4 minutes.) *See video below.
  5. Add butter or ghee along with maple flavoring.
  6. Process.
  7. Pour into molds.(You may use glass pan if desired.) I added cacao nibs to a few.
  8. Freeze till firm. Remove from mold or cut into squares.
  9. Makes approximately 20 small bites depending on mold.

    Can you possibly use real maple instead of flavoring? We tap our trees and I was wondering if I can use what we tap. If I can use it should I use the fresh from the tree liquid or the reduced down syrup?

    Thanks for sharing this recipe, Andrea – I have been searching for a simple energy/fat bite recipe like this for awhile now! How much sweetener do you use if you’re making the recipe with unsweetened coconut flakes? Do you keep them in the fridge and how long do they last? I can’t wait to try these!

      They last indefinitely in the fridge, Heather. But, if everyone likes them, they’ll be gone in no time. I don’t add sweetener because the coconut flakes taste sweet already. But, if someone is just coming off sugar they may need to add a tablespoon of something.

    I wanted to ask you – Is there another binding agent that can be used in your Maple coconut butter bites in place of butter? I’m am going on the mold detox diet and wont be able to use the butter due to the sugar content. Thank you again so very much!
